You can get the veggie black beans and rice over spaghetti, over baked potatoes, or in a taco salad.

 They have really nice garden salads with vegan dressings. 

 Their web site http://www.skylinechili.com/ briefly lists the black beans and rice under other options.  At least down here in Florida, they are very accommodating in making it the way you want it – no dairy products if you don’t want them.

  • 3 lbs. TVP ground “beef” (or 3 cans black beans, drained plus small pkg. TVP)* 
    2 qts. Vegetable broth 
    4 sm. chopped onions 
    2 cloves minced garlic 
    2 tbsp. chili powder 
    2 tsp. cumin 
    1 tsp. cinnamon 
    2 sm. red peppers 
    Dash of nutmeg 
    3 bay leaves 
    2 tbsp. vinegar 
    1 tbsp. lemon juice 
    1 (6 oz.) can tomato paste or small can of tomato sauce (just cook a little longer)

Put all ingredients in large pot and mix well, bring to a boil. Stir frequently, turn heat down and simmer for 2 hours. Salt to taste. 1/2 cup oatmeal to thicken.

Serve over spaghetti with cheese on top and crackers.
