Healthy lifestyle workshop set for Monday

CADILLAC - Those interested in learning about the importance of exercise and interested in trying out some vegan Mexican food should keep Monday night open.
 

Through a joint venture, Apple Valley Natural Foods and the Cadillac West Seventh Day Adventist Church will be offering their monthly Supper Club series at 6:30 p.m. at the Career Technical Center.
 

Judy Greenman said that she has been holding Supper Clubs, Healthy Living Clubs and other health and food classes on and off over the past 20 years.
 

“I have offered juicing classes and more recently lectures on health such as using charcoal as a compress and hydrotherapy, which involves using water to heal,” she said. “I enjoy sharing these ideas with people. It's good to learn new things in order to live a healthy lifestyle.”

Dr. Neil Goodman, who practices at the Family Health Care in Baldwin, will be on hand to talk about why exercise is important for a healthy lifestyle.

After the presentation by Goodman, three to four vegan Mexican dishes will be available.

“We have a few different dishes planned, so those who come shouldn't eat before,” Greenman said. “We try to do a different theme for food during each event. It gives people ideas on how to make tasty, different types of vegan meals.”

Anyone is welcome to attend and the cost is by donation. Greenman asks that people call her at Apple Valley Natural Foods, 775-6211, to let her know how many people will be attending so they will have an ample amount of food on hand.

Vegan Spanish Rice
- 1 1/2 cups chopped onion
- 2 cloves fresh garlic
- 1/4 cup olive oil
- 1/2 tsp. salt
- 1 3/4 cups raw brown rice
- 2 chopped green bell peppers
- 1/2 tsp. each of oregano and basil
- Cayenne pepper to taste
- 2 1/4 cups tomato juice
- 2 small fresh tomatoes, chopped
- 1/2 cup chopped green olives
- Freshly chopped parsley
- 1 packed cup grated cheddar soy cheese
 

Using large, heavy sauce pan, sauté onion, garlic, olive oil and salt until soft, about 5 to 8 minutes.
Add raw rice, green peppers and spices. Sauté over medium heat for about 5 to 8 minutes. Stir frequently.
Add tomato juice. Boil and then turn heat down and cover. Let it simmer for about 15 minutes.
Add tomatoes and olives. Stir and cover again. Continue to simmer until rice has absorbed all liquid (about 15 minutes).
Remove from heat. Fluff cooked rice with fork and transfer to serving bowl. Garnish with cheese and parsley. Serve immediately.
