Join us for a day of exploring a plant-based diet with speakers, vendors, restaurant samplings, food demos, prizes and videos. 2. AGEd Meat

The acronym of Advanced Glycoxidation End-products (AGE's, also known as glycotoxins) is an appropriate one. These AGE's accumulate in joints and cause arthritis;[1] they accumulate in the brain contributing to Alzheimer's disease,[2] and they accumulate in arteries causing high blood pressure[3] and atherosclerosis.[4] They build up in the eye and cause cataracts,[5] build up in the kidneys, contributing to kidney failure,[6] and build up in the penis causing male erectile dysfunction.[7] In fact there's a whole theory (the Maillard Theory) that blames nearly all the complications of aging on the buildup of these toxic compounds.[8]

4. Thai Tsunami Workers Turn Vegetarian

The gruesome task of retrieving the bodies of tsunami victims has turned many Thai rescue workers vegetarian, the Matichon newspaper said on Friday.

"Our operations in the first days weren't going smoothly," Chatchawan Suthiarun, who led a team of 70 in Khao Lak where about 4,000 people, more than half of them foreign tourists, were killed on Dec. 26, told the Thai-language newspaper.

"After we turned to vegetarian food and lighting jossticks to the spirits asking for help, the job has become much easier," he said. Matichon said vegetarian food was all the rage in one nearby village, where a makeshift relief kitchen produced about 1,000 boxes of meatless food a day.

The newspaper quoted a survivor as saying that the smell of death had put her off meat.

6. McCartney a Super Bowl Vegan

7. Study Urges Water Conservation On Farms

"A growing population coupled with diminishing fresh water supplies should force major changes in the way the world's farmers water their crops in the coming decades, a recent study recommends. Since agriculture uses about 70 percent of the world's fresh water every year, farming should be the focus of intense conservation efforts, said David Pimentel, a professor at Cornell University and primary author of the study published in the October issue of the journal BioScience.

Editor's Note: Livestock production uses more than half of all water used for all purposes in the United States. The Food Revolution, author John Robbins estimates that "you’d save more water by not eating a pound of California beef than you would by not showering for an entire year." 

8. Veganics: Organics with a Vegan Touch

Some people prefer organically grown food because they want to avoid pesticides. Some believe the most natural ways of growing are the most ecologically responsible. Other people want to be assured that the farm workers who harvested the crops did not have to face dangerous toxins. And there are those vegetarians who want foods that were not grown with chemicals that kill or cause other animals to suffer. For many people, reasons to choose organics include a combination of all of these reasons. Presently, however, much of the food available to U.S. consumers is grown in a production system that directly or indirectly exploits animals — even if it is organic.

9. "The China Study" Book Review

The China Study is setting a new standard. Dr. T. 10. American Journal of Public Health

American Cancer Society researchers tracked nearly 80,000 healthy adults for 10 years, they found that men and women who ate 19 or more servings of vegetables per week did not "succumb to abdominal obesity"-that is, they didn't develop spare tires-while those who ate meat more than seven times a week did.

SusanKay's Vegan Kitchen Recipes

Cheezy Cauliflower Casserole

1 head cauliflower, cut into flowerettes
1 Tab. soy margarine

Cheezy Sauce
2 cups water
1/4 cup raw cashews
1 small jar pimientos
1 1/2 tsp. salt
1/2 tsp. onion powder
1/4 tsp. garlic powder
3 Tab. cornstarch

Parboil cauliflower in water (boil until tender-crisp). Drain and place in an oiled casserole dish. Dot with the margarine.

Place cheezy sauce ingredients in a blender and process until very smooth. Pour over cauliflower. Cover and bake at 350 for 30 minutes.
